Guacamole Pasta Salad

Ingredients
- 2 1/2 C. dry orrechiette pasta
- 2-3 Tbs. extra virgin olive oil
- 1 ripe avocado, peeled and pitted
- juice of 1 lime
- 1 Tbs. diced jalapeno pepper
- 1 clove garlic, minced
- 1/4 C. onion
- 1/4 C. fresh chopped cilantro, packed
- 1/4 tsp. salt
Directions
Cook pasta according to package directions and drain. Pour pasta into a large bowl; toss with 1 tablespoon oil. Set aside. In bowl of food processor, combine avocado, lime juice, jalapeno, garlic, onion, cilantro, and salt. Chop until mixture is smooth and creamy. Add avocado mixture and remaining oil to pasta; mix well. Cover and refrigerate until serving.
