Ingredients

  • 1 large bunch broccoli, trimmed and separated into florets
  • 1 small onion, chopped
  • 1 large red skin potato, diced
  • 1/4 C. all-purpose flour
  • 3 C. low-sodium chicken broth (or vegetable broth)
  • 1/4 tsp. ground nutmeg
  • 1 C. shredded extra-sharp cheddar cheese
  • 1 tsp. Worcestershire sauce
  • 12 oz. fat-free evaporated milk
  • kosher salt and ground pepper to taste
  • 2 scallions, thinly sliced
