  • 2 lb. plums, pitted and quartered
  • 5 oz. soy yogurt
  • 1/4 C. water
  • 1 T. lemon juice
  • 1/2 C. agave nectar (or honey)
  • 1 1/2 tsp. vanilla extract
  • 1 C. whole wheat flour
  • 1/4 tsp. cinnamon
  • 2 T. cornstarch
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/16 tsp. stevia extract (or sweetener of choice)

Preheat your oven to 350°F and grease the inside of a 9-inch pie pan. Arrange the plum quarters inside of the prepared pan. In a medium bowl, mix together yogurt, water, lemon juice, agave, and vanilla. Whisk in the stevia extract until completely dissolved. In a separate bowl, mix together the remaining dry ingredients. Combine the wet ingredients with the dry, stirring until incorporated. Pour batter evenly on top of the plums. Bake for 45 minutes. Let stand for 15 minutes before serving.
