If you’ve got potatoes to use up, nothing could make a better snack than these thick-cut seasoned wedges. Oven bake them to gain a few health points, but don’t hold back on smothering them in flavor!

  • 5 russet potatoes
  • 3 T. olive oil
  • 6 garlic cloves, minced
  • 2 tsp. dried thyme
  • 2/3 C. grated parmesan cheese
  • Salt and pepper to taste

Preheat oven to 375 degrees F. Cut potatoes into thick, long wedges and lay them out on a baking sheet. Drizzle with olive oil. Sprinkle with garlic, thyme, parmesan, salt, and pepper. Toss lightly to coat the potatoes. Cook for 25 minutes or until golden brown.
