Halibut Creole

This delicious baked fish is best served as a main course. It's also pretty quick and easy to make!

Ingredients

  • 2 Tbs. butter
  • 1 Tbs. minced green pepper
  • 2 C. cooked tomatoes
  • 2 lbs. halibut steaks
  • 1 Tbs. flour
  • 1 Tbs. minced onion
  • salt
  • pepper

Directions

Preheat oven to 400 degrees. Melt butter and blend in flour. Add minced green pepper and onion and cook 3 minutes. Add tomatoes and cook until thickened, stirring constantly. Simmer 10 minutes longer, then rub through strainer and season with salt and pepper. Season halibut steaks with salt and pepper and arrange in greased baking dish. Pour Creole sauce over fish. Bake in oven for 30 minutes.

  • a lot of tomato taste, I added a fresh squeeze of a lemon to every bite which made it sooo much better!
