Prepare for Halloween a little early this year by making these deliciously sweet jam-filled cookies! Cut fun shapes into the top to make them even more festive!

  • 2 1/2 C. flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 2/3 C. butter, room temperature
  • 1 C. sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 3/4 C. raspberry jam

In a large bowl, mix the flour and baking soda. In a second bowl, beat the butter and sugar for 3 minutes. Add the eggs one at a time, beating after each addition. Mix in the vanilla then the flour mixture. Beat until a dough forms. Divide the dough into two parts and roll them out into two flat discs. Wrap them in foil and refrigerate for at least 1 hour.

Preheat the oven to 350 degrees. Roll out the dough to 1/5-in. thickness. Cut the dough into circles. In half of the circles, cut out small Halloween shapes, if desired. Bake the cookies for 7 to 8 minutes. Let the cookies cool before spreading 1 tsp. jam on half of the cookies. Cover with a second cookie with the shape cut out of it.
