  • 8 red potatoes, halved
  • ½ stick butter, melted
  • 1/3 C. Parmesan cheese, shredded
  • Salt and pepper to taste
  • 2 tsp. garlic powder
  • 1 tsp. oregano
  • Fresh parsley for garnish

Preheat oven to 400 degrees. Melt butter in a glass baking dish. Add Parmesan, garlic powder, and oregano to butter. Place potatoes (cut side down) on top of seasoned butter. Season potatoes with salt and pepper and bake for 45 minutes until tender. Cool slightly, remove from pan, garnish with parsley or chives, and serve.
