Ham and Cheddar Skillet Pie

A flaky buttermilk crust holds this hearty mixture of ham, bell pepper, and Cheddar cheese.

  • 1/2 C. buttermilk baking mix
  • 1/4 C. milk
  • 6 eggs
  • 1 C. smoked ham, fully cooked, cut up
  • 1/4 C. green bell pepper, seeded and chopped
  • 2 scallions, sliced
  • 2 Tbs. Unsalted butter
  • 1 C. shredded cheddar cheese

Combine first 3 ingredients and salt and pepper to taste in a bowl and mix with a fork. Mixture will be lumpy. Stir in ham, green pepper and scallions. Melt butter in a heavy nonstick skillet over medium heat until melted and bubbly. Gradually pour ham mixture into skillet. Cover and cook 10-12 minutes over medium low heat, until almost set. Sprinkle with cheese. Cover and cook 35 minutes more, until cheese is melted. This recipe serves 6 people.
