  • 3 eggs
  • pinch of salt
  • pinch of pepper
  • 8 slices of Texas toast
  • 3 tablespoons mustard
  • 3 tablespoons mayonnaise
  • 1 lb of thick cut baked ham
  • 1 ounce gruyere or mozzarella cheese, shredded
  • 3 tablespoons butter

Beat the eggs in a dish large enough to fit the bread in. Salt and pepper to taste, whisk and set aside. Assemble the sandwiches, with mustard, mayonnaise ham, cheese, salt and pepper. Slightly press the sandwiches. On medium heat, add and melt half the butter in a skillet. Dip and coat the sandwiches in the egg and place in skillet, cooking for 2-3 minutes on each side or until browned and cheese has melted.
