Ham and Cheese Macaroni Salad

A favorite sandwich gets a new twist when combined with pasta in a cold salad.

  • 8 oz. macaroni, cooked and drained
  • 2 C. cubed ham
  • 1/2 C. (4 oz.) Cheddar or Colby cheese, cut into small cubes
  • 1 (10 oz.) pkg. frozen peas, rinsed in hot water to thaw
  • 3 green onions, trimmed and chopped
  • 3/4 C. light sour cream
  • 3/4 C. light mayonnaise
  • 1/4 C. lemon juice
  • 1/4 C. grated parmesan cheese
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic granules
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

In large bowl combine, macaroni, ham, cheese cubes, green onion and the peas. In smaller bowl, mix, sour cream, mayonnaise, lemon juice, parmesan cheese and the seasonings. Pour dressing over macaroni mix and toss to blend well. Cover and refrigerate for several hours. Toss gently to mix before serving. If it seems dry add more mayonnaise and mix again. 8-10 servings.
