Ham And Oyster Dressing
- 4 boxes turkey-flavored dressing mix
- 4 large eggs
- 2 pts. oysters (don't throw out liquid)
- 1 lb. smoked ham chunks
- 3 sticks butter
- 2 C. celery diced
- 2 lg. onions, diced
- 2 cans chicken broth
- salt and pepper if desired
Prepare bird for stuffing or use a large roasting pan. In a very large bowl, add stuffing mix, eggs, broth and ham chunks and toss to mix.
In skillet, saute' onions and celery in the butter, and add drained quartered oysters when vegetables are transparent. Stir until oysters are curled, not too long or they will get hard. Remember to check the oysters for shells and save liquid.Now add cooled vegetables with oysters to the stuffing mixture and add liquid from oysters. If still not soft enough, add more chicken broth or hot water. Mix well, put into prepared bird or pan and bake for 2 hours @ 350 degrees. I add foil to top of pans to keep in moisture.
