  • 1/4 C. butter
  • 1 med. onion, minced
  • 3/4 C. diced ham
  • 1/2 C. chopped celery
  • 1 1/2 C. finely diced raw potatoes
  • 1/4 C. flour
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 C. milk

In large saucepan, melt butter and saute onion, ham and celery. Add potatoes and cook 10 minutes longer. Remove from heat and add flour, salt and pepper. Mix well. Add milk and return to heat. Warm slowly - do no let it boil. If not served immediately and soup thickens, add warm water to thin to desired consistency.
