It's been a long day at work. You are looking forward to kicking your feet up and enjoying some good old comfort food. This ham and potato skillet with jalapenos is sure to satisfy your craving for a hot home cooked meal. It is a super easy recipe using ingredients that one probably already has in their refrigerator. If you don't have ham, you can substitute with chicken. Kids will love this dish as well.

Ingredients

  • 1 lb of finely diced ham
  • 1 1/2 cup chopped celery
  • 4 cups diced potatoes
  • 1 1/2 cups frozen cut green beans or peas. (your choice)
  • 1 cup chopped onion
  • 1 cup chicken broth or water
  • 1/2 teaspoon dried thyme
  • 1 jar sliced jalapeƱos
  • salt and pepper
  • grated mozzarella cheese (optional)

Directions

Add olive oil to a large skillet and cook your celery and onion for 3 -5 minutes or until tender.  Add your diced potatoes, chicken broth and thyme.  Bring to a boil, reduce heat, then cover and simmer for approximately 20-25 minutes or until the potatoes are tender.  Most of the liquid will be gone. You can check the potatoes with a fork to make sure they are done.  During the last 5 minutes of cooking, add frozen peas or green beans. Add salt to taste.  Once plated, add sliced jalapeños from the jar to your liking.  Top with mozzarella cheese if desired.
