  • 2 cups diced ham
  • 4 cups shredded cheddar cheese
  • 1 ½ cups half and half
  • 1 beaten egg
  • ¾ cup pumpkin puree
  • ½ pound macaroni noodles
  • 2 teaspoons flour
  • 1/8 teaspoon nutmeg
  • ½ teaspoon poultry seasoning
  • Salt and pepper

Preheat the oven to 350 degrees F and boil a large pot of water. Add the noodles to the boiling water and cook for 8 minutes, then drain the noodles. Butter a baking dish to prepare and then add the noodles, ham, and 3 cups cheese to the dish. Stir to combine completely. In a small bowl, mix the pumpkin, flour, nutmeg, poultry seasoning, egg, half and half, and ½ teaspoon each of salt and pepper. Pour this mixture into the baking dish. Top with the rest of the cheese and bake for 45 minutes.
