Perfect for a Saturday or Sunday morning, this dish has all the breakfast essentials: ham, sausage, eggs, and cheese. This recipe features spinach, but that can be substituted with any vegetables you have on hand (broccoli, bell peppers, or kale!). For a healthier version, use turkey sausage and turkey bacon.

  • ½ lb ground sausage
  • ½ lb ham, cubed
  • 1 Tbs. vegetable oil
  • 1 C. spinach
  • 1 C. bread crumbs (more as needed to coat your pan or if you prefer a thicker crust)
  • 6 eggs
  • 2 C. of milk
  • ½ grated cheddar cheese
  • Salt and pepper to taste

Beat eggs, milk, salt and pepper

In a pan, heat oil to medium. Brown the sausage and ham

Remove the meat and cook spinach in the grease until slightly wilted

Press bread crumbs into the bottom of a greased baking dish

Sprinkle sausage, ham, and spinach evenly over bread crumbs

Pour egg mixture over the top


Bake for 45 minutes at 350 degrees. When there are 5 minutes left, sprinkle the cheddar over the top.
