  • 1 sliced onion
  • 1 sliced red bell pepper
  • ½ C. corn kernels
  • 1 C. diced, cooked ham
  • 1 tsp. salt
  • 6 eggs

In a large bowl, whisk together the eggs and salt. In a heavy skillet, begin to saute the onions and half of the pepper. Add in the cooked ham once the onion has softened, then spread the vegetables and ham evenly over the bottom of the pan. Pour the eggs into the pan, and allow to cook for about a minute. Place in the oven, heated to 400 degrees, and bake for 8 minutes. Top with the corn kernels and the rest of the pepper slices.
