Ingredients

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 1/2 tsp. fresh or dried rosemary
  • 4 slices ham
  • 4 slices provolone cheese
  • 1/2 C. frozen peas
  • 1 C. brown sauce
  • 1 C. flavored bread crumbs
  • 2 eggs
  • 1/2 C. milk
  • 4 lg. toothpicks
  • 2 tsp. butter
  • 2 tsp. olive oil
  • 1/2 C. flour

Oil an oven-proof casserole dish.  In a mixing bowl, beat eggs and milk.  Add flour to a flat plate, then add bread crumbs to a different flat plate.  On a flat surface, lay out chicken breasts.  Top successively with rosemary, slice ham, and provolone cheese.  Roll chicken like jelly rolls and secure with toothpicks.  Dredge rolled chicken in flour, then egg mixture.  Roll in bread crumbs, coating completely.  Lay breaded chicken in an oiled casserole dish and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes.  Heat brown sauce, thaw peas, and add peas to sauce.  Spoon sauce around chicken once it is finished cooking.
