Ham & Egg Rolls

This is a perfect dish for either breakfast or brunch. It's different from the usual egg dishes. It takes a bit more time to prepare but is well worth it! This can be prepared the night before and popped in the oven the next morning. This is also delicious using chunk chicken & cream of chicken soup as either lunch or supper.

Ingredients

  • 6 eggs
  • 1/2 C. diced celery
  • 2 tsp. chopped onion
  • 1 C. cream of mushroom soup
  • 1 C. diced ham
  • 1/3 C. milk
  • 1/2 C. croutons
  • 1 C. grated cheddar cheese

Directions

Mix meat, celery, onion, 1/4 C. of the soup, 1/2 C. croutons, 1/2 C. cheese in saucepan. Heat and stir. Remove from heat after it's mixed together well and heated through. Use Pam to spray a skillet. Beat 1 egg at a time and pour into pan; tilting pan until egg covers bottom of pan. Spray pan each time or use margarine (1 Tbs.). Cook slowly (2 minutes or until egg is light brown on bottom and set on top). Do not turn the egg over. Remove egg to plate. Spread 2 Tbs. meat mixture on egg and roll up. Place in shallow glass baking dish (13x9-inch). Continue until all 6 rolls are in dish. Mix remaining 3/4 C. soup, 1/3 C. milk, 1/2 C. cheese. Pour this over all the egg rolls and heat in oven 10-15 minutes at 325 degrees. This can also be made with diced or canned chicken and cream of chicken soup.
