  • 4 C. egg whites
  • 9 cage-free eggs
  • 1 lb. ham, diced
  • 2 C. spinach, chopped
  • 1 tbs. garlic, minced
  • 1 tbs. Italian seasoning
  • 2 tsp. onion powder
  • ¼ tsp. cayenne pepper
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper

Preheat oven to 375 degrees F and coat 2 (12-cup) muffin cups with non-stick cooking spray.

Place eggs in large bowl and beat until smooth. Beat in egg whites, ham, spinach, garlic, Italian seasoning, onion powder, cayenne pepper, salt and ground pepper. Stir until ingredients are well blended. Pour egg mixture into prepared muffin cups, filling each one ¾-full.

Bake muffins for 30 minutes or until firm and lightly brown. Serve warm.
