Risotto is a rice-based dish, that in this version includes smoked ham, grated cheese, and lots of dried herbs.

Ingredients

  • 1 1/4 C. long-grained rice, uncooked
  • 1 finely chopped onion
  • 1 leek, sliced
  • 2 Tbs. butter or margarine
  • water, salt
  • 1 stock cube
  • coarsely ground pepper
  • salt
  • dried herbs of your choice
  • 1/2 lb. frozen vegetables (a mix of corn, sweet pepper and green peas)
  • 1/2 C. smoked ham, shredded
  • 1 1/4 C. strong, grated cheese

Directions

Sautee onion and rice, add water, stock cube and pepper. Boil the rice according to package instructions. Add vegetables when 5 minutes remain of the cooking time. Shred the ham, fold it into the rice, flavor with herbs and serve with grated cheese and a fresh salad. Serves 4.
