Ham Risotto
Ingredients
- 1 1/4 C. long-grained rice, uncooked
- 1 finely chopped onion
- 1 leek, sliced
- 2 Tbs. butter or margarine
- water, salt
- 1 stock cube
- coarsely ground pepper
- salt
- dried herbs of your choice
- 1/2 lb. frozen vegetables (a mix of corn, sweet pepper and green peas)
- 1/2 C. smoked ham, shredded
- 1 1/4 C. strong, grated cheese
Directions
Sautee onion and rice, add water, stock cube and pepper. Boil the rice according to package instructions. Add vegetables when 5 minutes remain of the cooking time. Shred the ham, fold it into the rice, flavor with herbs and serve with grated cheese and a fresh salad. Serves 4.
