Hamburger Soup
Ingredients
- 1 lb. ground beef
- 1 28-oz. can diced tomatoes
- 1 med. onion, diced
- 3 lb. potatoes, cubed
- 1 lb. carrots, shredded or sliced
- 1 Tbs. parsley
- salt and pepper to taste
- 2 beef bouillon cubes
- 1 qt. water
Directions
Saute beef in a Dutch oven pot until browned. Add onions, parsley, salt, and pepper. Cook until onions are translucent. Add water and bouillon cubes, bring to a boil. Add tomatoes and carrots. Simmer over medium heat until carrots are about half-cooked.
Add potatoes and cook until potatoes and carrots are fully cooked.
