  • 5 lb. hamburger, lean
  • 12 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. marjoram
  • 2 tsp. garlic powder
  • 3 tsp. MSG
  • 1 1/2 tsp. Morton's Tender Quick
  • 12 tsp. liquid smoke flavoring
  • 12 tsp. water

Combine dry ingredients in a bowl, mix well. Add hamburger, mix well. Add water and liquid smoke, mixing well. Use a jerky gun to make the sticks and place in dehydrator until dried.

Note: If you like spicy jerky, add a little more cayenne pepper

  • I make a similar recipe but mine is called 'Summer Sausage'. I just make it up into rolls about 6 inches long and about as big around as a Ritz cracker. And it is baked on a rack over a rimmed baking sheet. It is really delicious. I've got to find that recipe now that cooler weather is here. Great on crackers as a snack or when you are out walking in the leaves!
