  • 4 C. carrots, sliced, cooked, and drained
  • 1 med. onion, chopped
  • 2 Tbs. butter, melted
  • one 10 3/4-oz. can cream of celery soup
  • 1 C. Cheddar cheese, shredded
  • Topping:
  • 1 1/2 C. herb seasoned stuffing mix, crushed
  • 1/4 C. butter, melted

Preheat oven to 350 degrees.  Saute onion in butter. Cool.  Add soup, carrots, and cheese. Place in a 9x9 inch casserole.  For topping, mix stuffing mix and butter together.  Sprinkle mixture on top of casserole. Bake 30-40 minutes or until hot and bubbly.

Serve with: Roast Pork with Creamy Mustard Sauce
