Harvest Carrot Casserole

Ingredients
- 4 C. carrots, sliced, cooked, and drained
- 1 med. onion, chopped
- 2 Tbs. butter, melted
- one 10 3/4-oz. can cream of celery soup
- 1 C. Cheddar cheese, shredded
- Topping:
- 1 1/2 C. herb seasoned stuffing mix, crushed
- 1/4 C. butter, melted
Directions
Preheat oven to 350 degrees. Saute onion in butter. Cool. Add soup, carrots, and cheese. Place in a 9x9 inch casserole. For topping, mix stuffing mix and butter together. Sprinkle mixture on top of casserole. Bake 30-40 minutes or until hot and bubbly.
