Harvest Pumpkin Spice Bars
Ingredients
- 4 eggs
- 1 C. vegetable oil
- 1 15-oz. can pumpkin (not pie mix)
- 2 C. sugar
- 2 C. flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 C. chopped walnuts
- Cream Cheese Frosting
- 1 3-oz. pkg. cream cheese, softened
- 1/3 C. butter or margarine, softened
- 1 tsp. vanilla
- 2 C. powdered sugar
Directions
Heat oven to 350 degrees. Grease bottom and sides of a 15 1/2 x 10 1/2 x 1-inch jelly roll pan. Beat eggs, sugar, oil and pumpkin in large
bowl until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Spread batter in pan. Bake 25-30 minutes or until light brown. Cool completely, about 1 hour. Frost with cream cheese frosting. Sprinkle with walnuts. For 49 bars, cut into 7 rows by 7 rows. Refrigerate any remaining bars.
