This is like an omelet and hash browns in one – a very filling, protein-filled breakfast.

  • 1 lb. frozen hash brown potatoes
  • 2 Tbs. cooking oil
  • 1/2 C. diced green peppers
  • 1/2 C. diced red peppers
  • 1/2 C. diced yellow peppers
  • 1/2 C. diced fresh tomatoes
  • 1 1/2 C. shredded blend of cheeses
  • 1 Tbs. parsley
  • 1 tsp. dill
  • 1 dozen eggs
  • 1/2 C. Half & Half cream
  • Paprika

Generously spray frying pan with non stick cooking spray. Pour oil into frying pan and add potatoes. Cook until browned. Meanwhile, gently whisk eggs, cream, parsley and dill. Add cheese, peppers and diced tomatoes. Pour over hash browns, sprinkle with cheese and paprika. Reduce heat, cover and simmer until eggs are set. Approximately 20-25 minutes.

Yield: 8 servings
