Hash Brown Strata

A strata usually has a large amount of bread in it, but hash browns replace the bread in this breakfast dish.

Ingredients

  • Nonstick cooking spray
  • 2 C. loose-pack frozen diced hash brown potatoes with onion and peppers
  • 1 C. broccoli florets
  • 1/3 C. finely chopped turkey bacon or turkey ham (about 2 oz.)
  • 1/3 C. evaporated fat-free milk
  • 2 Tbs. all-purpose flour
  • 2 8 oz. cartons refrigerated or frozen egg product, thawed
  • 1/2 C. shredded reduced-fat cheddar cheese
  • 1 Tbs. snipped fresh basil or 1/2 tsp. dried basil, crushed
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt

Directions

Coat a 2-quart square baking dish with cooking spray. Arrange hash brown potatoes and broccoli in bottom of the prepared baking dish; top with turkey bacon. Set aside. In a medium bowl gradually stir milk into flour. Stir in egg product, half of the cheese, the basil, black pepper, and salt. Pour egg mixture over potato mixture. Bake in a 350 degree oven for 40-45 minutes or until a knife inserted near the center comes out clean. Sprinkle with the remaining cheese. Let stand for 5 minutes. If desired, garnish with additional fresh basil.

Yield: 6 servings

Make-Ahead Tip: Assemble strata as above but do not bake. Cover and chill for 4-24 hours. To serve, uncover and bake as above.
