Haupia (Coconut) Bars

A sinfully great dessert of shortbread cookie crust with a creamy coconut layer on top.

  • 1 1/2 C. flour
  • 4 Tbs. sugar
  • 3/4 C. butter
  • 1 to 1 1/2 C. chopped nuts
  • 2 cans coconut milk
  • 3/4 C. sugar
  • 7 Tbs. cornstarch
  • water

Cookie Crust:

Mix flour with 4 Tbs. sugar. Cut in 1 1/2 cubes butter (3/4 C), Add in chopped nuts. Press into a 9X13 1/2" pan. Bake @ 350 degrees for 20 minutes.

Haupia Topping:

Combine in saucepan and cook until smooth the coconut milk, 3/4 C. sugar and 1 C. water. Mix 7 Tbs. cornstarch with 1/2 C. water then stir into mixture until thick. Cool. Pour over cookie crust. Refrigerate.

Top with jello, cool whip, whipped cream, etc. Anything that suits your fancy. I like to top with chocolate whipped cream and sprinkle shredded coconut.
