Ingredients
- 4-6 boneless chicken breasts
- 1 ½ C. pineapple juice
- ¾ C. barbecue sauce
- ¼ C. soy sauce
- ¼ C. apple cider vinegar
- 1/3 C. brown sugar
- 1 tsp. minced garlic
- 2 C. pineapple, chopped
- ½ C. red onion, chopped
- ½ C. yellow bell pepper, chopped
- 2 T. cilantro
- ¼ C. lime juice
- 1 T. hot sauce
- Salt and pepper to taste
- Flour tortillas
- 1 C. mozzarella cheese

Directions
Place chicken breasts in crockpot. Combine pineapple juice, barbecue sauce, soy sauce, apple cider vinegar, brown sugar, and garlic; pour over chicken and cook on high for 4-5 hours. In a bowl, toss chopped pineapple, yellow pepper, and onions with cilantro, lime juice, hot sauce, salt, and pepper. Shred cooked chicken and assemble on tortillas with pineapple blend, mozzarella, and a lime wedge for presentation!
