This recipe makes 2 pies and is sinfully delicious. It is almost like eating a banana split. I am always asked to bring these pies to our family gatherings and church suppers.

Ingredients

  • 1 20 oz. can crushed pineapple
  • 1 1/2 Tbs. flour
  • 1 C. sugar
  • 3 bananas, sliced in rounds
  • 1 can shredded coconut flakes
  • 1 C. chopped pecans
  • 1 8 oz. pkg. frozen strawberries, thawed and completely drained
  • 1 large container Cool Whip
  • 2 deep dish pie shells, baked until brown and cooled

Directions

In a saucepan, cook until thickened the crushed pineapple, flour and sugar. Line the baked pie shells with the sliced bananas. Sprinkle coconut flakes over bananas. Spread chopped pecans over the coconut flakes; Then cover this with the completely drained strawberries. Next place the cooled pineapple mixture over the strawberries, making sure to cover the whole pie. Top with Cool Whip. You can add more chopped pecans over the Cool Whip if desired.

Note: This makes 2 pies so only use 1/2 of of each item per pie. Keep refrigerated.
