The additions of ham and pineapple make this chicken recipe a tropical delight!

Ingredients

  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 4 canned pineapple rings, juice reserved
  • 4 slices ham
  • 4 slices Monterey Jack cheese
  • 1/2 C. flavored bread crumbs
  • 1/2 C. butter
  • sprig of chopped parsley

Directions

In a flat dish, press bread crumbs into chicken on both sides.  Lay two chicken breast halves side-by-side in a casserole dish.  Top successively with slice of ham, chicken half, pineapple, Monterey Jack cheese, parsley, and butter.  Add pineapple juice to casserole.  Bake in a preheated 400-degree oven for 25 minutes.  Remove from oven and serve on heated plates.  Spoon remaining juices around chicken.
