  • 3 Tbs. Rice Wine Vinegar
  • 1 tsp. Minced Garlic
  • 2/3 tsp. Ground Thyme
  • 2 tsp. Honey
  • 2 tsp. Prepared Mustard
  • 1/2 tsp. Sea Salt, plus additional to taste
  • 1/4 tsp. Ground Black Pepper, plus additional to taste
  • 6 Tbs. Extra-Virgin Olive Oil
  • 5-6 C. Watercress Leaves
  • 1 1/2 C. Fresh Pineapple, cubed
  • 8 oz. Deli-Style Smoked Ham, chopped

In a food processor or blender, combine the vinegar, garlic, thyme, honey, mustard, salt, and pepper, and pulse until a smooth dressing forms. Slowly pour in the olive oil and process until mixture has thickened. Add salt and pepper as needed. In a large bowl, combine the watercress leaves, pineapple, and ham. Drizzle the salad with the vinaigrette and gently toss to coat.
