Homemade potato chips is one of the easiest recipes that everybody manages to avoid. But today is the day! You can still have delicious chips that are slightly healthier by baking the potatoes instead of frying them. And adding a little cheese never hurt anyone!

  • 6 Yukon gold potatoes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 2 T. grated parmesan cheese
  • Chopped parsley

Preheat oven to 350 degrees F. Fill a bowl with cold ice water. Wash your potatoes thoroughly and peel if desired. Slice them into very thin chips with a sharp knife or mandolin. Place each slice into the ice water as you go. Drain them and pat dry. In a bowl, toss together with your hands the potato slices, salt, pepper, olive oil, and a pinch of parmesan. Coat baking sheets with olive oil and lay out the potatoes. Bake for 25 minutes or until crispy. Flip once, halfway through. Season with more salt, pepper, and the remaining cheese and serve.
