This recipe is proof that you can never have too many vegetables in one meal. The Italian chicken sausage tastes remarkable with the onions, garlic, peppers, potatoes, and zucchini. Feel free to experiment with other meats and vegetables when preparing this dish.

  • 1 lb. baby red potatoes, halved
  • 2 tsp. vegetable oil
  • 1/2 tsp. garlic powder
  • 1 tsp. sea salt
  • fresh cracked black pepper
  • 14 oz Italian chicken sausage, sliced 1-inch thick
  • 1 large yellow onion, chopped
  • 4 cloves garlic, mashed
  • 2 red bell peppers, thinly sliced
  • 2 T. fresh thyme
  • 2 C. zucchini, 1/2 inch thick and halved or quartered

Take out a deep, nonstick skillet and put the oil and potatoes inside of it. Cover and cook over high heat. Season with garlic powder, salt, and pepper. Once the potatoes begin to sizzle, lower the heat to low and cook covered for 20 minutes. Remember to periodically shake the skillet when cooking. When finished, remove from heat and allow the potatoes to sit covered for five minutes. Transfer the potatoes into a dish. Place the sausage inside the skillet and saute and cook on medium-low for 10 minutes or until browned. Remember to stir periodically.

Season the vegetables with salt and pepper to your liking and add the onions, peppers, garlic, and thyme to the skillet. Thoroughly combine the ingredients and cook until the onions and peppers begin to appear browned. Add the zucchini and cook for five more minutes. Add the potatoes back into the skillet and thoroughly combine all of the ingredients. Season with salt and pepper, cover, and cook for five minutes. Serve.
