  • Vegetable oil cooking spray
  • 1 carrot scrubbed and shredded
  • 1 teaspoon chili powder
  • 1/2 cup salsa
  • 1 1/2 cups black beans
  • 1 1/2 cups frozen whole kernel corn
  • 6 flour tortillas
  • 6 oz shredded cheddar cheese
  • Fresh cilantro leaves

Lightly spray a saucepan with vegetable oil cooking spray. Set pan over medium heat and add carrots and chili powder. Cook carrots for about 2 minutes until tender, stirring often. Add black beans, salsa, and frozen corn. Stir, then reduce heat to low. Cook for about 5 minutes until beans and corn are hot thoroughly and corn is tender. Divide filling between tortillas and top with cheese and fresh cilantro.
