  • 1 tbsp olive oil
  • 1 ½ tbsp. fresh lemon juice
  • ½ tbsp. grated lemon rind
  • 1 cup finely chopped onion
  • 3 cups unsalted vegetable stock-
  • 1 cup uncooked medium-grain or Arborio rice
  • ½ cup grated parmesan cheese
  • 1 ½ cups sliced asparagus
  • Black pepper and kosher salt

Preheat oven to 350°. Heat oil and cook the onion for three mins, and until tender brown. Add Arborio rice and mix in stock, salt, and pepper. Cook for 8 mins. Stir in half of the Parmesan cheese. Cover and bake for 15 mins at 400°. Stir in the rest of the cheese and asparagus. Cover and bake for another 15-20 minutes.
