Chili is a traditional dish that can be made in many different ways. This healthy version is made in a crockpot with chicken and black beans. If you like your chili a little spicier, add more jalapenos. If you like it sweeter, add more bell peppers.

  • 1 lb. skinless, boneless chicken breasts, cubed
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 jalapeno pepper, stemmed, seeded, and chopped
  • 1/2 C. bell pepper, chopped
  • 1/2 C. carrots, chopped
  • 1/2 C. celery, sliced
  • 1 (14-15 oz.) can diced fire roasted tomatoes with juice
  • 4 C. chicken broth
  • 2 cloves garlic, minced
  • 1/4 C. onion, chopped
  • 2 tsp. chili powder
  • 2 tsp. cumin
  • 1 bay leaf
  • 2 1/2 Tbs. oil, divided
  • 1/4 C. cilantro, chopped coarse
  • 1/2 tsp. salt

Saute the chicken in 1 Tbs. olive oil for 8 to 10 minutes, until the chicken is cooked through. Remove the chicken from the skillet and set aside. In the same skillet, add 1 1/2 Tbs. oil, onions, peppers, carrots, and celery. Saute until the onion is soft and translucent. Add the garlic and cook for an additional 30 seconds.

Put everything into a crockpot and stir well to combine. Cover and cook over low heat for 8 to 10 hours. Serve warm.
