These fun taco boats are a healthy snack or meal that everyone will love. It’s a miniature version of a favorite dish that takes less than thirty minutes to make and uses ingredients you already have in your fridge! If you don’t have the taco boats, use regular soft tortillas instead.

  • 12 mini soft tortilla taco boats
  • 3 C. chicken breast, cooked and diced
  • 1/4 C. Caesar salad dressing
  • 1 1/2 C. thinly sliced romaine lettuce
  • 1/4 C. cilantro leaves, chopped
  • 1/2 C. queso fresco cheese, crumbled
  • Pepper

Heat the oven to 325 degrees. Put the taco boats on a baking sheet and lightly spray them with cooking spray or brush lightly with olive oil. Bake for 2 to 3 minutes, until warm and slightly toasted. Meanwhile, in a bowl, toss the diced chicken in the salad dressing. When the boats are done in the oven, place 1/8 C. sliced romaine lettuce in the bottom. Scoop 1/4 C. dressed chicken on top of the lettuce. Divide the cilantro and queso fresco amongst the boats and sprinkle with pepper.
