Ingredients

  • 1/2 C. of raisins
  • 1/2 C. of crushed Chinese noodles
  • 1 s. red onion
  • 1 can drained black beans
  • 1 C. chicken, boneless,skinless, shredded
  • Dressing:
  • 3/4 C. virgin olive oil
  • 1/4 C. balsamic vinegar
  • 3 Tbs. Dijon mustard
  • 1 Tbs. fresh chives

Blend dressing and pour over salad. Chill 2-3 hours. Serve on a bed of lettuce or fresh spinach.
