  • For the Crust:
  • 10 tbsp. butter, chilled and chopped (1/2" pieces)
  • 2 tbsp. raw dark coconut sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 3 tbsp. ice water
  • 1 1/2 cups almond flour
  • 1 tbsp. lemon zest
  • 3 1/2 oz. almond paste, room temperature (1/2" inch pieces)
  • For the Filling:
  • 1/4 apricot jam, no preservatives
  • 6-12 figs
  • 2 tbsp. honey
  • 1 tsp. salt
  • 1/3 marscapone cheese, room temperature

In a food processor, pulse sugar, salt, and lemon zest together. Add in butter and pulse until coarse and crumbly. Add in cold water, 1 spoonful at a time until fully incorporated. Scoop out the dough and pat into a ball. Cover in plastic wrap and refrigerate for 1 hour. In a clean food processor, mix sugar, almond paste, mascarpone cheese, vanilla, and honey until smooth. Preheat the oven to 400 degrees and position oven rack to center of the oven. On a sheet of parchment paper, roll out dough into an 11 inch circle. Press the dough into a 9 inch tart pan. Spread the almond mixture over the dough. Place figs evenly across the top and smooth jam over the figs. Bake tart for 40 minutes until edges are golden. Allow to cool for 20 minutes and serve warm.
