  • 1 bunch Fresh Cilantro Chopped
  • 1 Onion Chopped
  • 4-6 cloves Garlic
  • 3 Tomatoes Chopped
  • 2 Cucumbers, thinly sliced
  • 3 Tbsp Olive Oil
  • ½ cup Lime Juice
  • 1 tsp Cumin
  • 2 cups Shredded Cabbage
  • 1 cup Shredded Cheddar Cheese
  • 1 Avocado Peeled & Mashed
  • ¼ cup Mayonnaise
  • ¼ cup Sour Cream
  • 1 lb Fish, mahi-mahi, swordfish or tuna
  • Soft Taco Shells

Place olive oil in skillet, then heat to medium. Add chopped onion and garlic. Sauté vegetables until tender then add tomato and cilantro. Sauté ten minutes then add lime juice and cumin. Stir well and simmer on low heat. Place avocado in food processor and add mayonnaise and sour cream. Blend until smooth and place in serving dish. Season fish with salt and pepper, then grill or broil until cooked through. Flake fish into a bowl.

To serve place fish in a taco shell of choice, top with a tablespoon or two of lime cilantro salsa, cucumber, shredded cabbage, and cheese. Finish with avocado mixture.
