These adorable egg salad ghosts will be the hit of your Halloween lunch. They are super easy to make and your kids will have fun while eating a healthy lunch.

Ingredients

  • 4 hard boiled eggs
  • 8 slices whole wheat bread
  • mayonnaise
  • 1 carrot stick, peeled
  • 4 olives
  • lettuce

Separate the yolks from the whites of the eggs. Put them in separated bowls and mash each with a fork. Add mayonnaise to taste to each bowl and mix well. Be sure that the yolks are smooth and creamy. With a cookie ghost cookie cutter cut out one ghost from each slice of bread. If you don't have a cookie cutter you can easily cut them out free hand (use scissors, it's easier). Place 2 ghost on each plate and spread the egg white salad on each ghost -- enough so that you don't see any bread. Now place the egg yolk mixture in a pastry bag with a thin tip and outline each ghost with the yolk. Slice an olive for each mouth. Cut tiny pieces of olive for the eyes or punch the eyes out of the olive using the tip of the pastry bag. Garnish with a leaf of lettuce with the word BOO! piped in the remainder of the egg yolk. You can also add carrot eyeballs. Simply take a slice of carrot and top it with a slice of olive. Fill the middle of the olive with either egg yolk or mayonnaise and another tiny piece of olive.
