Ingredients

  • 3 C. chopped Romaine
  • 2 C. baby spinach
  • 1 C. arugula
  • 1 C. cherry tomatoes
  • 4 eggs, boiled and peeled
  • Chicken
  • 1 large chicken breast, halved lengthwise
  • 1 Tbs. chili powder
  • 2 tsp. Cumin
  • 1 tsp. Garlic powder
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. cayenne
  • ¼ C. lime juice
  • Dressing
  • 1 C. olive oil
  • ½ C. Parmesan cheese
  • 2 cloves of garlic, minced
  • 2 Tbs, mayonnaise
  • 2 tsp. Dijon mustard
  • 1 large lemon, juiced
  • Salt and freshly ground pepper to taste

Directions

In a small bowl, whisk together the dressing ingredients and refrigerate. Heat a skillet on medium-high heat. In a small bowl, whisk together the chicken marinade and rub on the chicken breasts. Drizzle olive oil in the pan and cook the chicken for about five minutes on each side until it’s cooked thoroughly. Combine the greens and tomatoes in a large bowl. Add the eggs and assemble the eggs.
