Healthy Leek Rice
Serving Size / Yield
- 1 Cup Brown or White Rice
- 1 Onion, diced
- 4 Garlic Cloves, finely minced
- 2 Tbsp Olive Oil
- 2 cups Frozen Peas
- 2 cups Leek
- ⅓ cup Olive Oil
- ½ tsp Garlic Salt
- ¼ tsp Ground Black Pepper
Start by cooking rice according to package directions.
This usually takes about 45-50 minutes.
In a large skillet, saute onions, leeks, and garlic in olive oil for about 4 minutes or until onions are translucent.
Add the peas to the skillet and cook for another 6 minutes.
Mix with rice mixture and add remaining olive oil, salt and pepper.
