Healthy Muffins

These muffins taste great and keep their shape well! I keep them in the refrigerator and my husband, who needs a lot of fiber, really enjoys them!

Ingredients

  • 1 C. pumpkin or grated zucchini
  • 1 C. all bran cereal
  • 1/2 C. applesauce
  • 3/4 C. pineapple or orange juice
  • 3/4 C. brown sugar
  • 3/4 tsp. sugar alternative Stevia or 3/4 C. Splenda
  • 1/4 C. margarine, melted
  • 4 egg whites or 2 whole eggs
  • 1 tsp. vanilla
  • 3/4 C. whole wheat flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 tsp. cinnamon
  • 1/8 tsp. cardamom
  • 1/4 tsp. cloves
  • 1/4 tsp. mace
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 3/4 C. walnuts or pecans, coarsely chopped
  • 1/2 C. chopped dates
  • 1/4 C. shredded coconut
  • 1/2 C. raisins

Mix the first 4 ingredients together. Next, beat brown sugar, sugar substitute and margarine together. Add eggs and vanilla to mixture. In a separate bowl, add flour, baking soda, salt, baking powder, cinnamon, cardamon, cloves, mace, ginger, nutmeg and allspice and mix. Add dry mixture to wet mixture. Then add the rest of the ingredients and mix. Spray muffin tin with cooking spray. Bake at 350 degrees for 25 minutes or until toothpick comeso ut clean. Leave in muffin pan for an extra 10 minutes after they're finished baking.
