  • 1 1/2 C. elbow macaroni, uncooked
  • 1 lb. uncooked chicken breasts, chopped
  • 1 Tbs. fresh basil
  • 1 jar spaghetti sauce
  • 1 tsp. minced garlic
  • 1 can diced tomatoes, drained
  • 1 1/4 C. low-fat mozzarella
  • 2 Tbs. grated Parmesan cheese

Preheat the oven to 375 degrees and cook the pasta according to the directions. Drain and set aside. Cook the chicken and basil in a large sprayed skillet over medium-high, about 3 minutes. Stir in the spaghetti sauce, garlic, and tomatoes. Bring the mixture to a boil. Simmer on low for 3 minutes until the chicken is done. Add the mozzarella and mix until well combined. Stir the chicken mixture into the pasta and pour into a baking dish. Bake 20 minutes, then top with the parmesan cheese and bake another 3 minutes until the cheese is melted.
