  • 1 C. quinoa, rinsed
  • 2 Tbs. red-wine vinegar
  • 1 Tbs. olive oil
  • 2 C. roma tomatoes, sliced in half
  • 1 C. black olives, sliced
  • 3 scallions, thinly sliced
  • 1/4 C. packed fresh parsley leaves
  • Salt and pepper to taste

Boil quinoa and 1 C. salted water in a medium saucepan. Reduce to a simmer. Cover and cook for 10 to 12 minutes or until water has been absorbed. Transfer quinoa to bowl. Add remaining ingredients. Season with salt and pepper. Mix well.
