  • 4 chicken thighs, boneless and skinless
  • 1 Tbs. oil
  • 1 medium zucchini, rinsed
  • 2 scallions, chopped
  • 2 cloves garlic, minced
  • 8 oz. mushrooms, sliced
  • 3 sprigs fresh thyme
  • 1 C. white wine
  • 1 C. instant white rice
  • sea salt and pepper, to taste

Heat the oil in a large skillet over medium-high heat. Rinse the chicken and pat dry. Cut the chicken into pieces and sprinkle with salt and pepper. Add the chicken to the skillet and brown on all sides for 5 minutes. Slice the zucchini and add it to the chicken with the scallions, garlic, mushrooms and thyme. Allow them to saute for 3 to 5 minutes, then add the wine. Cover the skillet and reduce the heat. Simmer for 15 to 20 minutes. Add in the rice, cover, and simmer for another 15 to 20 minutes, or until the liquid is absorbed.
