Ingredients

  • 3 C. water
  • 1 1/2 C. uncooked white rice
  • 1 Tbs. dark sesame oil
  • 2 tsp. canola oil
  • cayenne pepper
  • salt and pepper
  • one 8-oz. pkg raw, cleaned, med. shrimp, tails removed, defrosted and patted dry
  • 1 med. yellow onion, diced
  • 2 cloves garlic, chopped
  • 1 sm. jar pimento slices, well drained
  • one 8-oz. bag broccoli florets, steamed and drained

Directions

Bring water to a boil in small saucepan. Add in sesame oil and stir in rice. Cover and reduce temperature to low for about 25 minutes. Remove from heat, put rice into a bowl and fluff with a fork so it will cool a bit. In large non-stick skillet, add in canola oil and sprinkle cayenne pepper (to taste). Turn up heat to medium high and let oil heat up. Add in shrimp and stir-fry for about 3 minutes. Then add in onion and garlic, cooking an additional 5 minutes. Add pimento and broccoli, mix well, and cook about 2 minutes. Finally, stir in the rice and mix well. Serve! You can sprinkle on a little soy sauce if you choose. Please note that the prep time below is deceiving as it is including the 25 minutes to cook the rice. You could always have the rice precooked, even the day before.

  • Oops, I forgot in the original recipe to say it serves two! I will also add the nutritional information! I am a Weight Watcher and only make meals to fit into my plan. Upfront I can tell you it is low fat!

  • This tastes like it came out of a restaurant. I think the dark sesame oil really makes the difference.
