  • 1 onion, diced
  • 4 tsp. Garlic, chopped
  • 1 large carrot, peeled and sliced
  • 2 celery stalks, sliced
  • 6 C. chicken stock
  • 2 C. turkey, shredded or diced
  • 1 Tbs. fresh thyme
  • 1 ½ C. tomatoes, diced
  • 1 C. pasta
  • 1 (14 oz.) can cannellini beans
  • 1 tsp. Soy sauce
  • 1 C. kale, chopped
  • Dash of cayenne
  • 1 Tbs. oil
  • 3 bay leaves

Heat a large saucepan on medium-high and add the oil, onion, carrots, celery, and garlic. Saute the veggies until they’re tender. Add the rest of the ingredients except for the pasta and turkey. Bring the broth to a boil and lower it to a simmer. Add the pasta and cover the pan. During the last 5-7 minutes, add in the turkey.
