  • 2 large zucchini
  • ½ C. finely chopped oil
  • 1 bell pepper, finely chopped
  • 3 cloves of garlic, minced
  • 1 lb. ground turkey
  • 2 tsp. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 C. tomato pasta sauce
  • 2 C. mozzarella cheese

Cut the zucchinis into three parts each. Scoop out the insides. In a large skillet, saute the onion and garlic for 3 minutes. Add the bell pepper and ground turkey. Continue to cook the meat until it’s crumbly and cooked all the way through. Pour the tomato sauce and 1 cup of the mozzarella in with the turkey and cover it with a lid. Let this simmer for 5-10 minutes. Place the zucchini in a large pan and stuff it with the mixture. Top the zucchini with the mozzarella and bake in a 375-degree oven for 10-15 minutes.
